Being on keto, I really try to cook a variation of different foods and meals each week, because it is so easy to get stagnant cooking the same foods over and over again. So, while I am creating my menu for the week, I try to add new recipes in to keep the keto diet “fresh.” And while I enjoy a good pork chop, they are not usually my first choice for meat (that would be bacon). However, this Simple One-Pan Smothered Keto Pork Chop recipe has been a game changer.

This low carb dish is easy delicious and can be on the table in 30 minutes or less. After a long day of taking care of the preschooler and working on the blog, this is such an easy dish to make. Plus, since it only uses one pan, clean up was a breeze. Oh, and let me tell you about how the sauce is wonderfully delicious and creamy.

You bet they are! I commonly use boneless pork loin for my pork chop recipes.  It is cheap and easy to find. However, bone-in pork chops or thick-cut boneless are also options for this recipe with cooking times adjusted to account for the thickness.

Tips to Making the Perfect Pork Chops

This simple one-pan pork chops recipe is super simple to make. Start this recipe by heating a pan on medium-high heat. I like using a cast iron skillet (I’ll be using the words “pan” and “skillet” interchangeably throughout this post for no other reason than I’m lazy.) but if you do not have one, any large pan or skillet will do. Add the bacon and cook until just crispy, then remove. Keep the bacon fat in the skillet because the rest of recipe will use this fat for flavor and to keep the meat from sticking.

Season up the pork chops with salt and pepper and then add them to the skillet. Sear both sides of the pork chop by cooking 4 minutes on both sides. It is important to get a good sear to seal in the juices.Simple creamy smothered keto pork chops

Remove the pork chops and prepare the sauce by add 1 tablespoon olive oil to the same skillet. Then add sliced mushrooms and minced garlic and season with salt and fresh chopped basil leaves. Cook until the mushrooms soften.

Next, add the chicken broth and turn the heat to high to boil. Keep stirring. Next add the heavy cream and 2 oz cream cheese and stir, stir, stir until everything is silky smooth and there are no lumps.

Now, reduce your heat to low and add the pork chops and bacon back into the pan. Cover and cook on low heat for about 10 minutes or until your pork chops are thoroughly cooked. Check to make sure there is no pink on the inside of the pork chop.

When you are ready to serve this meal, just scoop up a big portion of the golden, creamy mushroom and bacon mixture on top of the pork chop, add a pinch (or more) of more basil leaves.
