Here is a great Paleo-friendly recipe that works great as an appetizer or as part of a meal. This spread can be used as a vegetable dip, as a spread on Crostini or as a fish or meat topping.
Not only is this spread delicious but also very nutritious packing a healthy dose of Omega- 3 and Omega-6 fatty acids and protein.
Ingredients
1 cup black olives, pitted
1 cup walnuts, coarsely chopped
1/4 cup cold pressed olive oil
1 tsp minced garlic
1 tsp thyme leaves
1 tsp basil
1 tsp oregano
1 tsp rosemary
Directions
1. Place olives, walnuts, herbs and garlic in a food processor.
2. Process until the mixture is mixed well.
3. Slowly add olive oil, processing until the mixture reaches the desired consistency.
4. Store in an airtight container in the refrigerator.
