Before having children, I use to have time to work and make large dinners. They were not spectacular, elaborate, or planned meals but, they kept the family fed nonetheless. Now that I am staying home with my little one, and doing the “domesticated mama” gig, I just cannot find a single second to make a meal.
Recently, I started experimenting with my crockpot. This little slow simmers and tenderizes tough cuts of beef, turkey, pork, and chicken, and creates a flavorful richness to homemade soups and stews. It’s also great for cooking dried beans and legumes, casseroles, rice, and pasta dishes. This little invention is a new mom’s best friend.
The greatest advantage of all is it is an easy and affordable way to create great meals. It just takes a few minutes of prep time in the morning and voila, a hot dinner that I did not have to slave over a hot stove to create.
During my experimentation with various recipes I found on the internet and in cookbooks, I began inventing my own recipes that became instant hits with my family that were both delicious and nutritious. Since weight loss is one of my goals, I decided to create recipes that are low carb, low fat, and highly tasty.
I have included a recipe here and will add recipes to this blog as I experiment and perfect them. I hope that you find this recipe as delicious and nutritious as I have and hopefully, give you respite in the kitchen department.
Spicy Pork Chops
Ingredients
- 8 boneless pork chops (about 2.5 pounds)
- 1 15-oz can of green beans
- 1.5 cups of salsa (mild or hot depending on your taste)
- ½ medium onion, chopped
- 1 tbsp cumin
- 1 tbsp chili powder
- 1 tbsp garlic
- 1 tbsp oregano
- ½ tbsp. crushed cayenne pepper
Directions
- Place pork chops at the bottom of 4 quart slow cooker.
- In a bowl, mix spices, green beans, and salsa. Pour over pork chops.
- Cook Low 9 ½ hours OR High 5 hours
- Serve over hot cooked cauliflower rice
