This year, since my husband and I are following a Paleo lifestyle, we thought that treats would be a big no-no. But the longer that I have followed this lifestyle, the more I realize that almost anything can be modified into a Paleo form.
For Valentine’s Day this year, I have decided to make our treats. This one was super easy and MUCH cheaper and healthier than Shari’s Berries. These can be whipped up in less than 30 minutes. So if you are following a Paleo lifestyle or just want a healthier option, try this great recipe.
Ingredients
- 16- Medium sized strawberries
- 1/2 c. Enjoy Life Semi Sweet Mini Chips (Dairy, Nut and Soy Free)
- 1 section 100% Cacao unsweetened chocolate
- 1 tbsp Coconut oil
- 1/4 c Chopped walnuts or almonds
- 1/4 c Unsweetened shredded coconut
Directions
- Rinse and dry strawberries. Set aside.
- Melt coconut oil, mini chips, and cacao in microwave safe dish. Approximately 2 mins. Stir until smooth.
- Place chopped nuts and unsweetened shredded coconut on separate plates.
- Line cookie sheet with parchment paper or wax paper.
- Take strawberry by the steam or leaves and dip into chocolate. Twist to make sure chocolate covers all sides.
- Roll into coconut or nuts. You can also leave plain.
- Gently place on cookie sheet.
- Refrigerate for 10 minutes
