Nutty Double Chocolate Banana Muffins

Ingredients
  

  • 2 large ripe bananas
  • 2 eggs
  • 1/4 cup coconut oil melted
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 2 1/2 cup blanched almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup Enjoy Life mini chocolate chips
  • 1/4 cup walnuts chopped (optional)

Instructions
 

  • Preheat oven to 325 degrees F.
  • Line a muffin tin with lightly greased paper liners.
  • In a large bowl, mash bananas in a large bowl until smooth.
  • Stir in eggs, coconut oil, maple syrup and vanilla.
  • In a seperate bowl, sift together the cocoa powder, almond flour, baking soda and salt.
  • Add dry mixture to banana mixture and stir until completely combined.
  • Fold in the chocolate chips and walnuts.
  • Fill muffin cups nearly full and bake for 25 to 30 minutes.

Notes

Great tips:
Muffins are finished baking when a toothpick comes out clean.
Experiment with various types of nuts to change the texture and flavor of this muffin.
