pre-cooked shrimp with shells and tails removed

balsamic vinegar

Instructions
In a large skillet over medium heat, add 1 Tbsp of olive oil and sauté the chopped onions and garlic for 2-4 minutes
Add the sliced mushrooms to the sautéed onions and garlic and cook 2-4 minutes until the mushrooms are golden.
Add 1 tablespoon of olive oil and 1 tablespoon of balsamic vinegar to the pan.
Gently toss in the Roma tomatoes, sweet pepper, artichoke hearts, and olives.
Sprinkle in parsley, oregano, basil, and stir until combined.
Add shrimp and spinach to the pan – stir and cook until shrimp is heated through (about 1-2 minutes).
Add more salt and pepper to taste.
Serve hot.
