St. Patrick's Day Crockpot Corned Beef & Cabbage

Ingredients
  

  • 1 4 pound corned beef brisket with spice packet
  • 1 head cabbage coarsely chopped
  • 1 bag of baby carrots
  • 3 sweet potatoes cubed
  • 1 onion peeled and chopped
  • 2 cups water

Instructions
 

  • Place the carrots, potatoes, and onion into the bottom of the crockpot.
  • Pour in the water and place the brisket on top of the vegetables.
  • Sprinkle on the spices from the packet, cover.
  • Cook covered LOW 8-10 hours

Notes

An hour before serving, stir in the cabbage, cover, and cook for an additional hour.
