Tofu Biryani

A delicious tofu recipe that incorporates Indian herbs and spices for a quick and flavorful meal.

Ingredients
  

  • 2 tsp vegetable oil
  • 14- oz House Foods firm tofu cubed
  • 1 cup chopped onion
  • 2 Thai chili peppers seeded and minced
  • 1 tsp minced fresh ginger
  • 1 ½ tsp garam marsala
  • ¾ tsp cumin
  • ½ tsp salt
  • 2 tbsp. minced garlic
  • 2 cup chopped tomatoes
  • 1 cup uncooked rice
  • 1 can vegetable broth
  • 1/3 cup golden raisins
  • ¼ cup chopped cilantro
  • ¼ cup sliced almonds

Instructions
 

  • 1. Heat oil in large skillet over medium heat.
  • 2. Add tofu to skillet and sauté for 3 minutes.
  • 3. Add onion, peppers, ginger, garam marsala, cumin, salt, and garlic to skillet. Sauté for 30 seconds.
  • 4. Add tomato, rice, raisins, and broth and bring to a boil.
  • 5. Cover and reduce heat.
  • 6. Simmer for 15 minutes until rice is tender.
  • 7. Stir in cilantro.
  • 8. Sprinkle with almonds prior to serving.
