minced fresh ginger

uncooked rice

can vegetable broth

golden raisins

chopped cilantro

Instructions
1. Heat oil in large skillet over medium heat.
2. Add tofu to skillet and sauté for 3 minutes.
3. Add onion, peppers, ginger, garam marsala, cumin, salt, and garlic to skillet. Sauté for 30 seconds.
4. Add tomato, rice, raisins, and broth and bring to a boil.
5. Cover and reduce heat.
6. Simmer for 15 minutes until rice is tender.
7. Stir in cilantro.
8. Sprinkle with almonds prior to serving.
