I really needed something sweet, yet healthy, the other day. Being on a Paleo type eating plan makes getting sweets difficult. Most of my food intake has consisted of whole foods that do not contain preservatives, additives, or sugar. But, these chocolate banana muffins were just what I needed.
By using whole foods such as banana, walnuts, and almond flour makes a moist muffins that is so good you’ll forget that it is healthy. The banana really helps with the sweetness aspect without an overly “banana-y” tasting treat. I am certain you will enjoy this even if are following a Gluten-free or dairy-free lifestyle as well.
Nutty Double Chocolate Banana Muffins
A delicious and healthy chocolate banana muffin that is Paleo-friendly.
Ingredients
- 2 large ripe bananas
- 2 eggs
- 1/4 cup coconut oil melted
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 2 1/2 cup blanched almond flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup Enjoy Life mini chocolate chips
- 1/4 cup walnuts chopped (optional)
Instructions
- Preheat oven to 325 degrees F.
- Line a muffin tin with lightly greased paper liners.
- In a large bowl, mash bananas in a large bowl until smooth.
- Stir in eggs, coconut oil, maple syrup and vanilla.
- In a seperate bowl, sift together the cocoa powder, almond flour, baking soda and salt.
- Add dry mixture to banana mixture and stir until completely combined.
- Fold in the chocolate chips and walnuts.
- Fill muffin cups nearly full and bake for 25 to 30 minutes.
