One-Skillet Whole30 Mediterranean Shrimp Recipe

Here is a recipe for an amazing one skillet Mediterranean shrimp dish that will have you begging for seconds.

The amazing marriage of the Mediterranean inspired ingredients help to transform boring shrimp into a work of art. The sweet, tangy, and savory flavored of the olives, peppers, artichoke hearts, spinach, and basaltic vinegar help to pull out the flavored of the herbs and spices in this recipe and awakening all of your senses.

If shrimp is not your thing, you can, of course, substitute the shrimp for any white or oily fish to create an entirely unique dish for your days of meatless eating.  Enjoy! 

One-Skillet Whole30 Mediterranean Shrimp Recipe

Ingredients
  

  • 1/2 yellow onion diced
  • 3 cloves garlic minced
  • 1.5 cups mushrooms sliced
  • 3 Roma tomatoes diced
  • 8 oz jarred artichoke hearts liquid drained
  • 1/2 cup red bell pepper chopped
  • 12 Kalamata olives sliced
  • 1 lb pre-cooked shrimp with shells and tails removed
  • 4 cups Fresh spinach
  • 2 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 2 Tbsp basil chopped
  • Salt & pepper to taste

Instructions
 

  • In a large skillet over medium heat, add 1 Tbsp of olive oil and sauté the chopped onions and garlic for 2-4 minutes
  • Add the sliced mushrooms to the sautéed onions and garlic and cook 2-4 minutes until the mushrooms are golden.
  • Add 1 tablespoon of olive oil and 1 tablespoon of balsamic vinegar to the pan.
  • Gently toss in the Roma tomatoes, sweet pepper, artichoke hearts, and olives.
  • Sprinkle in parsley, oregano, basil, and stir until combined.
  • Add shrimp and spinach to the pan – stir and cook until shrimp is heated through (about 1-2 minutes).
  • Add more salt and pepper to taste.
  • Serve hot.
