The Feast of St. Patrick or Saint Patrick’s Day is a cultural and religious holiday that is celebrated around the world on March 17. St. Patrick’s Day is named after the 4th century, the most renowned of the patron saints of Ireland.
While I am not Irish, I celebrate St. Patrick’s Day like any good American should. This meal is one of my all-time favorite meals to make for St. Patrick’s Day. This flavorful, juicy and savory crockpot corned beef and cabbage dish is great to serve anytime of the year.
St. Patrick's Day Crockpot Corned Beef & Cabbage
A delicious St. Patrick's Day meal.
Ingredients
- 1 4 pound corned beef brisket with spice packet
- 1 head cabbage coarsely chopped
- 1 bag of baby carrots
- 3 sweet potatoes cubed
- 1 onion peeled and chopped
- 2 cups water
Instructions
- Place the carrots, potatoes, and onion into the bottom of the crockpot.
- Pour in the water and place the brisket on top of the vegetables.
- Sprinkle on the spices from the packet, cover.
- Cook covered LOW 8-10 hours
Notes
An hour before serving, stir in the cabbage, cover, and cook for an additional hour.
