As you know, crockpot cooking is an excellent time saver tool for your cooking preparation as well as a “set it and forget it” cooking method. Unfortunately, it is very possible to make overcooked, mushy and downright unsavory meals in a crockpot if not prepared correctly. This crockpot recipe is not one of them.
You can be assured that all crockpot recipes on this blog have been tried and tested on the pickiest of eaters…my family. So if you have a picky eater or just want to try something new, remember to follow my blog.
Ingredients
- 8 boneless, skinless chicken breasts
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 chopped onion
- 2 green bell peppers, cut into 1″ pieces
- 2 c. jarred pizza sauce
- 1 c. shredded pizza cheese
Directions
- Sprinkle chicken with salt and pepper.
- Place in a 3 – 4 quart crockpot
- Top with the onions and bell pepper.
- Pour the pizza sauce over all.
- Cover and cook on low for 4 – 5 hours, until chicken is thoroughly cooked.
- Stir well.
- Sprinkle with cheese and let stand 5 minutes to melt cheese.

You may be able to decrease the carb content even further by substituting the jarred pizza sauce for a low carb/Atkins brand.
