I have a special treat for you today. As the weather starts to shift and get colder, now is when I like warm and hearty food that can be made in large batches and reheated later. When I eat this stew I am reminded of cold winters in St. Louis as a little kid when my mom would make this on the stove to simmer all day.

This is a hearty beef stew recipe that is reminiscent of my mother’s beef stew but for the crock pot. Place all the ingredients in the crock pot, give it a quick stir, and leave it to cook all day. Believe me, you and your family will not be disappointed with this stew. Leftovers can be frozen or refrigerated to enjoy on another day.
