Pumpkin spiced beverages from coffee shops and restaurants are all the rage right now. Despite the fact that these beverages taste amazing, they are loaded with sugar and dairy that adds unwanted calories and eventually pounds. Not to mention setting you up for a big energy crash. A medium sized 12 oz pumpkin spiced latte made with 2% milk has 300 calories, 11 grams of fat and 40 grams of carbs! Just when you thought you were going to have to forego the pumpkin spiced drinks this year, I’ve created a healthy skinny pumpkin spiced protein frappe recipe that offers pumpkin spice flavor plus a good deal of protein and fiber to keep you satisfied.

Making this skinny pumpkin spiced protein frappe involves you freezing a few ingredients into ice cubes. You will need an ice cube tray to do this. I know most people don’t have ice cube trays anymore because our freezers all have ice cube makers now, but you can pick one up for $1 at the Dollar Store —believe me you will get your money’s worth out of it. Fill half the ice cube tray with Homemade & Healthy Pumpkin Butter (recipe), in the other half fill with freshly brewed coffee. Since the pumpkin butter already has spices and agave in it, no need to add anything else to this mix.

After the ice cubes are completely frozen, throw half the pumpkin butter cubes (3 cubes) and half the coffee cubes (3-4 cubes) into the blender, add 1 cup of water, and one scoop of vanilla protein powder (I use Quest Nutrition Protein Powder, Vanilla Milkshake) and you are set. Save the remaining pumpkin and coffee cubes for your next skinny frappe.

Coming in at about 190 calories, 3 grams of fat and 16 grams of protein, this skinny pumpkin spiced frappe is full of delicious pumpkin flavor without all the calories and fat. To increase your potassium, add half of a frozen banana to your frappe, and you’re still less than 250 calories. Enjoy!
