If you’re like me, you really don’t know what a turkey breast roast is. Turkey breast roast is heart-healthy, low-fat and protein-rich.  A turkey breast roast is the juicy white breast meat along with some dark turkey meat that is packaged together in a net. The net holds all the meat “pieces” together. It is great on salads, sandwiches, or as a main course.

Most come with a  gravy packet as well. Since I am doing Paleo, I  had to forgo the gravy. I have modified the traditional turkey breast roast recipe to make it more Paleo and low carb-friendly. This is sure to be a crowd pleaser for a casual weeknight dinner or for a more formal Sunday dinner.

Ingredients
  • 3 to 4 lb Turkey Breast
  • Cooking spray
  • 2 Carrots, chopped
  • 1 Celery stalk, chopped
  • 1 small onion, diced
  • 1 medium tart apple, peeled and chopped
  • 2 medium sweet potatoes, chopped
  • 1 cup chicken stock
  • 1 tbsp onion powder
  • 1 tbsp minced garlic
  • 2 tsp garlic powder
  • 2 tsps parsley
  • 1. 5 tsps coriander
  • 1.5 tsps cumin
  • 1 tsp rosemary
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp thyme
  • 1 tsp cayenne pepper
  • 1 tsp marjoram
Directions

1. Wash and pay dry turkey breast, set aside.
2. Add vegetables and apple to the bottom of the crockpot
3. In a small bowl, mix all the herbs and spices.
4. Spray entire turkey breast with cooking spray (since I’m doing Paleo I used coconut oil spray).
5. Rub turkey breast with herbs and spices and place on top of vegetables in the crockpot, skin side up.
6. Pour chicken stock around turkey breast.
7. Cook on Low 8-10 hours.
8. Optional: Remove from crockpot and place in a baking dish. Put turkey breast under the broiler for 4-5 mins to brown the skin.

Makes 6 servings.
