I am into month #2 of the Paleo diet. Month #1 was not bad as I had expected. The majority of the month was spent detoxing off of sugars and processed foods.

Learning to eat whole, healthy, and fresh foods has been an adjustment but has really made a change in me physically and mentally. My energy levels are rebounding back up and my mind is so much more clear since I started the Paleo diet on January 1.

Being on the Paleo diet means scrutinizing over food labels. One food item that I recently viewed was the ketchup label. What a mistake. Unless you are buying organic and gluten free, the commercial ketchup brands contain ingredients that are not so good for our bodies. Ingredients such as corn syrup, corn syrup solids, and reconstructed tomatoes. Yikes!

So I set out to make a homemade Paleo ketchup that is delicious and nutritious. After a little experimentation I came up with this. Oh it is so good, even the toddler and teen enjoyed it and so will you. Enjoy!

Ingredients

1-6 oz can tomato paste
1/2cup water
1 tbsp Apple Cider Vinegar
1/2 tsp garlic salt
1 tsp curry powder
1/2 tsp onion powder
This recipe makes approximately 16 oz of ketchup, or 32 1tbsp servings.

Directions

1. Mix tomato paste, herbs, and spices together.
2. Slowly add water. Add more water for thinner ketchup, add less water for thicker ketchup
3. Transfer to a glass jar and refrigerate.
