Pork Chops at www. sexymoxiemama.comAs the weeks go on in this weight loss and Paleo journey, I am finding more flavorful ways to prepare some of my favorite foods. It is no doubt that I am a lover of food.

What I am an even bigger lover of is FAST flavorful foods made in my crockpot. With two little kids and an active preteen, I need to be able to set and forget any meal that I am going to make. Not to mention if I want my husband to continue with me on this healthy eating journey, I better make foods that taste so good that he forgets he’s on a “diet”.

I came up with this recipe after a nearly failed attempt at attempting to recreate a previously prepared pork chop recipe that I, ironically, forgot to write the recipe down for. I have the ingredients recorded in My Fitness Pal and planned to post it here but it seems I forgot to add a few things. As I was desperately trying to rack my brain, I noticed a few apples that I needed to use up soon. And thus, this remarkable recipe was born.

Apples have always been a good combination with pork. Growing up, my mother did not prepare pork chops with apples. . I learned to love it this way when I was in the military stationed in the south. When visiting my friends family in southern Alabama, pork was always paired with apple in some shape or fashion.

Ingredients

  • 2lbs boneless pork chops
  • 3 medium apples, cut into 1 inch chunks
  • 1 medium onion, diced
  • 1 cup homemade chicken stock (RECIPE)
  • 3 TBSP apple cider vinegar
  • 2 TBSP minced garlic
  • 1 TBSP Mrs. Dash (Garlic and Herb blend), separated

Directions

1. Chop apple and dice onion and place in the crock pot.
2. Add ½ TBSP of Mrs. Dash to the apple and onion, stir.
3. Place pork chops on top of apples and onions.
4. Mix together chicken stock, garlic, and cider vinegar, pour over pork chops.
5. Finish with remaining Mrs. Dash on top.
6. Close the lid and cook for 4 hours on high or 8 hours  on low.
