SW Paleo Turkey Meatloaf

If you like your food a little spicy, you are going to love this amazing meatloaf. My traditional meatloaf was from a delectable recipe passed down from my mother. The meatloaf was moist and flavorful–like a meatball in a loaf pan. It included ingredients such as ground beef, eggs, Italian breadcrumbs, herbs and spices.

Since starting to eat a Paleo-friendly diet, my need for flavorful really increased tenfold. This recipe is a modification of my original meatloaf recipe but with a little more spice. This meatloaf really reminds me of a spicy taco. Ground turkey replaces ground beef in this tasty meatloaf recipe, making it a healthy, moist, flavorful, family hit.

Serve this meatloaf alone or with mashed sweet potatoes and green peas, broccoli. Fresh salsa is the secret ingredient, added on top of the meatloaf before serving. Enjoy!

 

Ingredients
1 lb Ground Turkey or chicken
1/4 Large White Onion, diced
1 Jalapeño Pepper, diced
1/2 Bell Pepper, diced
1 Egg
3 tbsp Coconut Flour
1 pkg Simply Organic Southwest Taco Spices
Fresh salsa (optional)
Directions
1. Preheat oven to 375 degrees.
2. Dice all vegetables and place in a large bowl.
3. Add to bowl ground turkey (or chicken), egg, spice packet,and coconut flour.
4. Mix all ingredients together by hand, ensuring all ingredients are evenly combined.
5. Place mixture into loaf pan.
6. Bake for 40 minutes.
7. Serve with salsa or Paleo ketchup.
