Happy St. Patrick’s Day! Before my Paleo days, I loved to have ice cream as a treat. I had indulged in a McDonald’s Shamrock Shake a time or two. This shake is a healthy “smoothie” version of the classic St. Patrick’s Day shake but with all natural ingredients.

This Paleo Shamrock Shake uses spinach and mint for natural green coloring, banana and honey for sweetness, and coconut milk for healthy fat. This tastes absolutely decadent. It can be made into a meal that’s great for St. Patrick’s Day, or any day you want a sweet and healthy treat. This shake is a guaranteed way to get kids to get their green vegetables in.  Enjoy!

Ingredients

1/2 cup plain, unsweetened almond milk
1/2 cup canned coconut milk
1/2 teaspoon pure vanilla extract
1/4 teaspoon pure mint extract
1/2 teaspoon raw honey
1/8 teaspoon sea salt
2 cups organic baby spinach
1 cup kale1/2 cup fresh mint leaves
2 large over-ripe bananas, cut into chunks and  frozen

 

Instructions

1. Place all of the ingredients into a blender.
2. Blend until smooth.
3. Top with cacao nibs
4. Serve immediately.

 Yield: 2 servings
