SexyMoxieMama's-Paleo-Coconut-Almond CupsSince starting the Paleo lifestyle, I have had some pretty strong cravings for chocolate. I started experimenting with cocoa powder and coconut oil to make a freezer chocolate. While it satisfied my cravings, I wanted something a little more.

Through a trial and error processes I came up with this. Oh my goodness, it is so good! I even told my husband (who is also participating in the Paleo lifestyle and has an even bigger sweet tooth than I) that I have no idea why anyone would want to eat commercial chocolate that is full of preservatives and added sugars when they can have this healthy treat! Honestly, I’m never going back to junk food again.

Ingredients
  • 6 Tbsp Raw almond butter
  • 6 Tbsp Unsweetened, shredded coconut
  • 3 Tbsp Coconut oil, melted
  • 1 bag Enjoy Life (Dairy, Nut, Soy Free) chocolate chips
  • 12 Muffin tin liner cups
Directions
  1. Melt entire bag if chocolate chips and 3 Tbsp of coconut oil in a microwave dish for about 1 minute. Stir well.
  2. Place liner cups into muffin tin.
  3. Carefully pour the melted chocolate chips into the liner cups. Pour just enough to just cover the bottom of the cup.
  4. Place the muffin tin in the freezer for 15 mins or until chocolate has solidified.
  5. Take muffin tin out of freezer and place 1/2 tbsp of almond butter in the center if each cup.
  6. Take 1/2 tbsp of shredded coconut and place it on top of almond butter in each cup.
  7. Stir the chocolate again. If it has started to thicken, place back into the microwave for 15-30 seconds.
  8. Pour the remaining chocolate over the almond butter/coconut mixture in each cup.
  9. Return muffin tin to the freezer for 15 minutes, or until the chocolate hardens. Enjoy.
